FYI, the SSDs in that model laptop have an extremely high rate of failure so if you end up with a blinking folder with a question mark, or the system has Kernel Panics (especially when waking the laptop from sleep), then most likely the SSD is failing.
Assuming the SSD is still good, the only two options for attempting to access data on that SSD is either installing the SSD into another MBPro 13" 2016 or 2017 non-touchbar model, or have a professional data recovery service such as Drive Savers attempt to recovery data from that SSD. As @Phil0124 mentioned, there are no enclosures or adapters for this Apple proprietary SSD.
People should always have frequent and regular backups of their computer and all external media (including the cloud) which contains important & unique data. FYI, it is impossible to recover accidentally deleted data from an SSD after the Trash has been emptied due to how SSDs work. Plus an SSD can fail at any time without any warning signs (even a brand new SSD). With the Apple USB-C Macs, there are a lot more new ways to lose access to your data especially with the 2018+ models. Backups are more important than ever before.
