If I let my boyfriend use my iPad and he signs in under my Apple ID and password (which he knows) for the iMessages, will it alert me on my iPhone that he signed into it?

Letting anyone else know and use your AppleID and device passcode is generally a really bad idea which all too often ends badly.
It allows them to virtually “Be You” … for any/all online matters. (including potential legal and/or financial liabilities)
Any “boyfriend” who doesn’t understand and respect that deserves a re-evaluation.

I believe it might. I occasionally receive spurious messages from Apple about how a new iPad has signed into iMessages. In fact it isn't a new iPad, it is an 8 year old one that I just start up once per month or so, but Apple sends me a notice about messages.
I'm not connecting everything here. If you are already signed in on the iPad with your ID then why would he need to sign in with your ID again? Notifications are sent out when a device that was previously not set up or was set up with another ID, signs in with your ID. Doing what you describe means this wouldn't happen since if it is your iPad and he is using your account then he isn't signing into the iPad. All he would need is your passcode to get into the iPad.
He knows my passcode but I signed out of my iMessages on the iPad so if he figures out my Apple ID password will it notify me that someone accessed my iMessages?
