i pressed the home button and sleep/wake button and connected it to iTunes and it updated to iOS 10.2.1

No, Your unit is either incapable of 10 or above or can only be updated directly to 12.5.7.

An iPod touch 5 isn't capable of 10 or above; they require an A6 or better CPU. To install 9.3.5, use a computer or the Software Update function in Settings.
