You can edit your medical contacts in your Medical ID settings. Here is how:
Set up your Medical ID in the Health app on your iPhone - Apple Support

I’ve done that my kids are still receiving them
But want my kids to be on my contacts they should be notified
Unfortunately, you can't have it both ways.
