My MacBook Pro has a phone number for iMessage that I do not recognize

The phone numbers supported by messages are a DIRECT correlation of what Apple-ID is currently signed in.

Do not try to remove form inside Messages.app. if you wish to get your Own messages on this device, use

System preferences > iCloud -or- Internet Accounts > iCloud ...

... log out of the obsolete Apple-ID and log in with your own Apple-ID.
