How do you change the dictionary from US to Australian in Pages using the iPad?

Make sure you are using the keyboard for Australian English and have your device language set to that as well.

Can you give examples of things which are not being checked correctly? Normally the keyboard determines the spellcheck language.

Spellcheck is for all Apple apps, there is nothing separate for Pages.
