you should not have been able to delete the Sleep app. See the 'Set up Sleep' section in:

On your iPhone, open the Apple Watch app. Scan down and look for Sleep, which you may find listed in the section "Available Apps." If Sleep is there, tap it to download it to your watch. If Sleep is not there, open the App Store app on your watch and in the search bar, type Sleep and download it from there.
New Apple Watch 8 today. I think I may have deleted the Sleep app as I was going through deleting app that I would not use. Went back through the setup on my iPhone 14 Pro with IOS 16.5, but was unable to find the Sleep app for the Watch to download on either the iPhone or the AppleWatch. Going through the setup process did not reveal a way to reinstall the watch app. Any ideas?
Thanks, Javalinga. I went back and erased the watch and resynched it to my iPhone. Sleep app was included and appears to be working.
