My child’s iPad was set up under my Apple ID several years ago. We are now getting him his own Apple ID. Does he lose all apps and game progress he has accumulated under my Apple ID if I disconnect my AppleID from his iPad?

It's understandable that you'd want to set your son up with his own Apple ID. You can share purchases with your Apple ID, but he may loose some game data, since that's synced to an Apple ID: Access your Apple Arcade gameplay data on all of your devices
To share purchases, you must first set up Family Sharing: Set up Family Sharing
Also, be sure to learn about creating an Apple ID for your son: Create an Apple ID for your child
