How do I reset the feature showing me what percentage of battery I used on which apps?

You can’t really. Maybe if you reset to factory conditions and recover from a backup, but that’s rather drastic. Even then I’m not sure it won’t have battery usage with any gaps treated as if it was powered down.
Battery utilisation is automatically calculated. Short of resetting the iPad, you cannot manually reset the calculated statistics.
