How can I retrieve old Apple ID and password if I don’t remember either or have the phone or email it was attached to? I don’t remember my Apple ID or password or any other information from when I originally made it

You have to remove the watch from your Apple Account or your friend will never be able to use the watch you sold them.

Two, if you have the original purchase receipt, which shows the watch Serial Number, you can ask Apple to unlock the watch. You have to do this. Your friend cannot.
