if my airpods are connected, will the alarm play out loud or just in the airpods?

The alarm should play through the iPhone speakers, as well as the AirPods when connected. You can find more information about that in the link you came from, which may be helpful: How to set and change alarms on your iPhone
If you connect headphones to your iPhone, the alarm plays at a set volume through the built-in speakers on your iPhone as well as wired and wireless headphones.
