I recently got a new iphone which has 250 something GB of storage so i no longer feel the need to keep paying for extra icloud storage. If i unsubscribe will ALL my photos stay on my iphone? will they stay on icloud? i really don’t want to lose any of my photos.

Download, then Downgrade:
If not downloaded, then it will be gone. So, download all of iCloud, prior to downgrading your iCloud Plan.
Properly Downgrading iCloud:
1. Download All of iCloud, First:

then...
2. Downgrade (or Cancel) your iCloud Plan:
If you want to get less storage in iCloud, downgrading your iCloud plan is the way to go. Note that this has a monthly fee. Here is the link to user: iCloud+ Plans and Pricing - Apple Support. Note that this service is not available in all countries/regions.
