You use your iTunes Library.
Since the only method for adding music to an iPod Classic was via iTunes, that music should still be in your iTunes Library. Use iTunes to add the music to the phone.
If you are using a more modern Mac, that uses Finder rather than iTunes, then use Finder.
This all depends upon you having kept a copy of the music on your computer, or moving it to your new computer. If you no longer have access to the original library, you will have to use third-party software to retrieve the music from the Classic.
