Reset watch without restoring old content

Series 8 not hold charge for long (less than 8 hours). Trying to do a full factory reset as a final try in case something installed is screwing things up. After a watch erase and then re-paired with phone it loads all old settings and apps, even though I selected "set up as new".

Restore Apple Watch From Demo Mode Not sure why all of the topics about this I run into are users flat-out lying about not being able to remove demo mode for retail Apple watches for whatever reason. I just dislike the blunt dishonestly. So I will share the way to do it maybe it will help someone. Demo mode does not allow you to reset the watch like normal. Why? I'm honestly not sure, that's another topic. But when you navigate to settings and go to general it has the reset option there but you can not click it. There's a secret menu that will allow you to access the reset options/Wifi options. You just gotta know the gestures. It's honestly clever. So clever that I wouldn't be revealing it if so many were not straight out lying to curious people about it. Anyway, navigate to settings, don't click anything, take two fingers and double-tap the screen while in settings. BINGO! The actual settings menu appears it resembles the original. Use this hidden menu to against settings or connect to store wifi etc.

Apple watch series 7 keeps resetting itself I bought a series 7 watch less than 2 weeks ago. It's worked fine until 2 days ago. I put it on the charger at night, and when I remove it in the morning, it's reset itself and I have to set it up as new watch and restore from backup. Yesterday it was easy enough, but this morning it didn't want to pair and took over an hour to get it back. I recently installed the latest security update on phone (12 pro max) and I wonder if this has anything to do with it? The OS on the watch is up to date as well. Any suggestions? I really don't want to have to play groundhog day and set up a "new" watch every day.

Just prior to erasing the watch, the backup is made.

Are you not given the option to use or to not use the backup when setting up the watch as new?
