If you put a new SIM card is you data from your phone still on you r phone, also can you make a new back up?

A SIM card in Apple iPhones only stores information about your cellular service. The rest of the data is stored in the phone and will remain there if you change cards. Your phone will behave as usual as regards to other services and features, including making backups.
