How to Change a Row to a Header Row

I'm trying to freeze 3 header rows, but only one of them is defined as a header row. I'd like to define the other two as header rows so that I can freeze all 3.

Please note: I'm not asking whether this can be done, I'm asking what the steps are to actually do it.

Thanks!

With the table selected you can also go to the Table tab in the sidebar and change the relevant number in the Headers & Footer section to 1 (or more, up to 5).
