Restoring photos from an old backup (PC)

I want to restore photos from an old iPhone backup in iTunes on PC. Is it safe to do a new backup in iTunes on PC, restore the old one, save the photos, then restore the new current one? Will Restore let me choose which backup to use on each occasion?
