For entering my passcode, how do I show the numbers on the lock screen instead of the single field?

As described, you have chosen (and set) an alphanumeric for your Passcode. As such, you’ll not see the onscreen numeric keypad, but instead a single field with an onscreen keyboard.
If you wish to just see a numeric keypad, you’ll need to change your device Passcode to a six (or four) digit code.
