Numbers
Numbers won't save as it says i'm offline but i'm not and can't find a setting to change that?

Numbers still works offline. The only time this would be an issue is if you're in a collaboration spreadsheet or if you want the document to save (back up) to iCloud. There was a conversation about this, but this method is definitely not ideal - Numbers offline - check connection - Apple Community.
Have you tried restarting your MacBook Air and the Numbers application?
