Pretty sure my husband is monitoring my phone and or house through an Apple Watch. Somehow the Apple Watch app magically appeared on my phone and it’s showing availability on my Bluetooth. However, I cannot find it nor did I buy one. Is this even possible? And if so, how do I locate this thing in the house?

The Apple Watch App is included as part of iOS. As such, unless you specifically deleted it, it has been there since you bought the iPhone.
If you open the App, does it show being paired to an Apple Watch? If so, you should be able to find the paired Apple Watch using these steps from If your Apple Watch is lost or stolen - Apple Support:
On your iPhone
1. Open the Find My app.
2. Choose the Devices tab.
3. Select your Apple Watch to see its location on the map.
