Updates can sometimes take a long time to complete, often it is just a matter of waiting it out ...
eg: you may see the apple logo and progress bar on the screen several times, before the update completes.
(lots of factors are involved ... wi-fi speeds / cellular connection / amount of free space on iPhone etc.)
