How do stop my iphone from picking up everything thats being said from radio, tv? Conversations close by and putting words onto whatever im tryxing to send ?

Looks like Voice Control is On.
Go to -> Settings -> Accessibility -> Speak Auto-Text -> Off.

In what situations are you seeing your iPhone listening?
Is it only when texting using the Microphone button?
Is the phone jailbroken?
Do you see an orange dot on the top right of your screen? This is the only time your phone is listening.
