i want to take my iphone and apple watch while traveling internationally. If I turn off cellular on watch, will it be a gps watch only? i will add travel plan to phone but don’t want to on my watch.

Yes, if you turn off cellular on the watch, it will work as a GPS only watch. And as long as you have your paired iPhone with you, it will work just fine.
