This really isn't a "built-in" functionality. What people are doing are removing the app from their Home Screen. Tap and hold any app, tap Remove App, and then tap Remove app from Home Screen.
After this, they're using the Shortcuts app to make the following animation
You then change the name of the shortcut to the app name, this case Calendar.
Afterwards you right click on Mac on the Shortcut and click Change Icon.
On iPhone, open the shortcut and click on the name, from here click Change Icon.
Choose whatever picture from your Photo Library you want the Calendar app to look like.
Finally, do the same as above, but this time choose Add to Home Screen. Your new app is there with a new icon.
