I just downloaded Ventura 14 which has adversely affected my Illustrator operation. How do I remove Ventura from my hard drive?

There is no Ventura 14. Do you mean Ventura 13.4.1?
You can't just "uninstall" it. What version of macOS were you running before?
I don’t remember and can’t find out as my version is now Ventura. I assume it was Maverick.
can’t open automatically eps files in Illustrator it automatically opens in photoshop which is no good to me nor people I will sending images too.

Select one of your .eps files, press "command i", in the Get Info window that opens, change "Open with:" to Adobe Illustrator from the drop down menu, then click the "Change All:" button. They should then open with Illustrator.
yes it is Ventura 13.4.1 am going to try and uninstall it - a terrible upgrade for this in the graphics industry
my computer is Mac Pro 16 GB Apple M1 chip
