Will the iMac with the Intel processor ever get an update to use Touch ID?!? I had no idea I wouldn't be able to use it till after I had purchased the iMac.

Probably not, I suspect it is a hardware, not software issue. TouchID probably requires the Neural Engine.

After an admittedly cursory review of these documents, it would appear that the iMac indeed simply lacks the necessary Secure Enclave / Security Processing hardware.

The short answer is no.
As users like yourself, we have no idea if Apple plans on adding that feature to Intel Mac's.
It might help to send feedback to Apple, but don't hold your breath.
