How do I retrieve IMessages from my phone when I have the “keep Messages” set to forever? And how can I print them from my phone or a windows laptop?

Welcome to Apple Support Communities. If you are looking for certain messages on your iPhone and want to find them quickly, you can search your iPhone using the search bar as shown in Use Search on your iPhone, iPad, or iPod touch - Apple Support or searching directly in the Messages app.
There is not a direct way to print iMessages on a PC. However, you can screenshot them or copy them and then print if that helps. Just in case it's needed, check out Take a screenshot on your iPhone - Apple Support for capturing screenshots.
