How do I convert my handwritten digital notes to text?

I followed all the steps here: Use Apple Pencil with your iPad - Apple Support. However, I do not have the ‘Copy as Text’ option. What am I doing wrong? For reference, I am working from iOS 16.1 on iPad 9.

Thanks for these. I am familiar using the functionality of the first link you posted and the second link is what I am asking about above. I want to convert my handwritten e-notes to text but when I follow the steps in the 2nd link you posted I am not given the ‘Copy as Text’ option. I am trying to pinpoint if it is a user issue, software issue or perhaps it is not a function on iPad 9?
