If you delete current backup…

does it delete everything everything off your phone? Like if I play a game with progression and coins and I delete the backup does it erase all of my current data for that? And if I delete the current backup can I still have all my apps’ progress on the phone to backup?

No, deleting a backup does not delete the data on your iPhone. A backup is only a copy of your data.

Will deleting backups remove everything on my phone? My last backup was 2022 and I can't backup again due to the large MB I have from the last backup.
