I want to italicize
I have read every post here about how to return the italics command back to command+i, but it still opens an email. It is driving me nuts. I need italics for school. Any help appreciated.

The italics command (Command-I) is still there. If you're within a text editor on Safari, such as when posting a comment, you can still do (Command-I) to italicize what you've selected or for every word to be italicize after you click (Command-I). Try it when responding to this comment, I just hit Command-I to get this to work.
The only time (Command-I) does not work is when you're not within a text editor/formatter in Safari.
I don't even see Command-I mentioned within the available shortcuts - Keyboard shortcuts and gestures in Safari on Mac - Apple Support. I will have to send an update asking them to add it.
But Safari and other applications on macOS, when a text editor or document supports being italicized, you will be able to use Command-I to italicize.
