How do I move MY Documents folder from the iCloud back to my hard drive?

You would need to disable desktop and documents ion iCloud.
System Settings > Apple ID > iCloud > iCloud Drive
You'll then get a fresh desktop and documents folder. Your previously synced data will be in folders named "desktop" and "documents" in the iCloud Drive. Just copy those items to the new locations.
