Did you enter your Apple ID and Password after clicking on the message? It is common to get phishing scams after a device is stolen to try and get your Apple credential to be able to unlock your phone. If you gave anyone your credentials, they will be able to switch off Find My and the device will then be theirs.

As long as you reported it as lost and did not give up your credential, the device will be no use for them.

Would the action of clicking a link automatically remove the device from the Op's account or would they need to provide their Apple Credentials through a phishing attempt so the thief could remove the device themselves?

It would be important to determine the cause to prevent compromises in the future for this Op and others. There was no mention of the OP providing their password in response to clicking the link.
