My "July Challenge" is to complete <n> number of open water swims of five minutes or longer.
Today I completed a 36 minute open water swim as part of a multi-sport workout.
My July challenge still shows 0 open water swims completed.
What is the best way to submit feedback to Apple to make the Fitness team aware of this bug?

Look into the WorkOut-Doors app. Best out doors app out there. Has Map tracking too. I use it for my walks/hikes and dog walking. They need to add yard work/lawn mowing to it!
