previous owner's access to my apple watch info
If someone has given me their apple watch and I pair it with my phone, is there a possibility the previous owner can have access to my messages?

No, once the previous owner removes Activation Lock (so you can pair with your iPhone using your Apple ID). the watch cannot be accessed by anyone else except you.
