If you are adding a new eSim to an existing iPhone you do so by transferring it from another iPhone or via a QR code from your service provider as shown in the screenshots you posted.


You need to request an eSim QR code from your provider if you want to add one to your iPhone.


Alternatively you can convert an existing physical SIM card on your iPhone to an eSim if you want to and your carrier supports it, by following the steps here -> About eSIM on iPhone - convert SIM card to eSim - Apple Support


What are you trying to accomplish exactly?

Are you trying to add a new number, different to the one you already have, or are you trying to convert your existing number and its physical SIM card to an eSim?
