iPhone was stolen and I erased it from Find My App but now it’s showing a trash can icon. Does that mean it’s erased or not?

No. If whoever has your phone disassembled it and sold it for parts, you cannot track a part from the phone. Just follow the good advice provided and don't remove the phone from your account. You erased it, so your data is off the phone.

Don'ts

If the device is removed from an account after it is erased, Activation Lock will be turned off. This allows another person to turn on and use the device.

An example of my iPhone 5 is given in the GIF below. There is no "Undo" after you remove it from your account.

The data on the phone has been erased. The phone does not have a "memory" card.

Do NOT remove the device though, unless you want to allow open access to your erased phone, so it can be sold to another person and they can set it up with a different Apple ID.

The pic below is self-explanatory. If it is erased it will show as erased. Probably it is not connected to the internet yet.
