Just installed a Samsung 980 pro to a Late 2013 Macbook Pro...
Since Samsung and Apple are not talking, is there something similar to the Samsung Magician that would allow me to better manage this SSD?

Why do you need the Samsung Magician app? There is no need for it.
Just enable TRIM using the command line:
sudo trimforce enable
If you want to monitor the SSD's health, then use the third party app DriveDx. Just because DriveDx may show a warning or failure notice with an SSD...it doesn't necessarily mean it is bad...just that you need to manually review the health information to determine if the warning or failing notice is something to worry about or just something to keep an eye on.
If there is a firmware update for the SSD, then most times Samsung will provide an OS independent firmware updater in the form of an .iso image file which can be "burned" to a USB stick. Look at the "Firmware" section of this Samsung page (they usually have a Mac specific version, but if not, then it is usually still possible to make it work):
