Hi JustMeAskingAgain,
If your account is greyed out in Settings across the top, do you have any restrictions on this device? Or was it given from an employer, school or guardian? If so, it is probable there is a configuration profile on this iPhone preventing that info from being accessed. In that case, you will want to reach out to whomever issued the iPhone for assistance.
