Guest mode in iPhone

As the others have said, iOS does not offer a guest account.

There is Guided Access.

"Guided Access limits your device to a single app and lets you control which features are available. You can turn on Guided Access when you let a child use your device, or when accidental gestures might distract you."

There is no guest mode. The device is designed to be only used be you and not shared with anyone else.

You are free to provide feedback to Apple if that is a feature you think is important to have.
