It's impossible to overcharge an iPhone. The phone has very sophisticated charging mechanisms built in which completely prevents any worries about overcharging.

The absolute best way to charge an iPhone is to put it on its charger at night, while you sleep, leaving it on its charger, all night, every night, with Optimized Battery Charging turned on in Settings > Battery > Battery Health.

Don't let the phone fully deplete and avoid letting the phone go below 20%.

Otherwise as Niel correctly points out, Battery Health will decline, typically about 1% per month and that is completely normal and expected. Battery Health decline cannot be stopped.
