I don’t know my email address. Can they not look it up by my phone number?
I don’t know the iCloud that I used to hook up my old phone :( how can I find my iCloud so I can log in?

The only way to find your Apple ID email address is through the article you linked from on top. Your Apple ID is not tied to any phone number and is only associated by the device. The device can change phone numbers without having any affect on your Apple ID.
