You cannot copy music directly from an iPod to an iPhone.

If I understand you correctly, you have music on your iPod but not on your computer. However, the method for adding the music to another device is from iTunes (the computer programme, not the store), not from one device to another. (If you have a Mac, using OS Catalina (10:15) or later, then you use Finder, not iTunes.)

There is no specific procedure to disconnect an iPod from its library, because there is no need to do so.

If the music on your iPod is not in an iTunes Library, which would thereby allow you to add that music to the phone from the Library, then you will have to go through the process of recovering or rebuilding the library.

If your music came from:

    • the iTunes Store - sign into your iTunes Store account on your phone and download the music directly from the store
    • other online stores, such as Amazon, Bandcamp etc., then go to your account with that store and download your past purchases from there to your computer
    • CDs that you ripped (copied) into iTunes, then you need to re-copy the CDs onto your current computer

Once you have downloaded everything, add it to your iTunes Library (or Finder) and then having re-built your library, use iTunes (or Finder) to add the music to the phone.

One last option is to recover the music from your iPod by using third-party software. This tip from user turingtest2 will help: Recover your iTunes library from your iPo… - Apple Community
