Running an M1 Mac BigSur 11.7.8 since updating to this yesterday Mail has been running very slow and un responsive and also some email accounts are failing to connect. Working perfectly OK before the update.
iOS running Mail perfectly fine still.
BTW its a production machine so don't really need to keep it that up to date.
I get that and have always been behind on OS because if I have a stable machine then its a productive machine.
I've just updated to Monterey 12.6.7 didn't fix the problem as a download but have sorted what was wrong. The previous BS update for some reason populated email account information with old server settings so was blocking some of the accounts. No idea why that happened so all deleted and all working fine again.

Not that it has to do with your email issue but, you are two upgrades behind and there were fixes, security updates and feature enhancements. Up to you of course but it's generally a good idea to run the latest compatible version of macOS you can.
Just to add, when Sonoma is released later this year, Big Sur will no longer be supported.
