How do I see apple pay transactions

Apple Pay transactions would never show just "Apple Pay". They should show the merchant name.

Do you mean it shows "apple.com/bill"? In that case the merchant is actually Apple.

The support document you posted form will help you see your most recent individual transactions if your card issuer supports it.
