Transactions on Apple Pay are in the individual payments methods (cards) in your Wallet app on your iPhone.

Apple does not have access to transaction information. That’s part of the security Apple Pay provides. The transaction information you see in the Wallet are provided by the issuing bank. Most banks only list the transactions for 10 to 30 days. However, a few show information for much longer.
