I downloaded the bèta version ios 17. Now I want to go back to ios 16 but I can't find how I can do that.

There is no downgrade.
Restore your backup from prior to the installation of the beta.
If you don't have a backup from prior to loading the beta, then you're either going to be starting over from a reset device, or are committed to the continuation of the beta.
