You do it the opposite way of turning it on. This is copied from the relevant article that you were reading when you posted your question to the community.
- iPhone or iPad: Go to Settings > General > Software Update > Automatic Updates, then make sure that "Security Responses & System Files" is turned on. Or in your case, turn it OFF.
