what's the most elegant solution to a lack of USB ports on M2 Mac mini

Depending on what you’re after, there are options.
Brydge has some docks list as “coming soon”, and some folks here are fond of the Caldigit options.

if you view usb-a as being usb and not usb-c then you can get adaptors
