There is no downgrade.

Restore your backup from prior to the installation of the beta.

If you don't have a backup from prior to loading the beta, then you're either going to be starting over from a reset device, or are committed to the continuation of the beta.

The only way to mark data as being valuable is with backups.

With no backups, an iPhone or iPad is one dunk, one drop, one loss or theft, or one failure away from data loss.

There is not now and never has been a downgrade.

There is no iOS downgrade.

Which Apple Watch, and which iPhone?

What is happening (or not happening) with this iPhone, and this Watch?

The most recent Apple Watch models require an iPhone that can run iOS 17. Per Apple: “Apple Watch Ultra 2, Apple Watch Series 9, and Apple Watch SE require iPhone Xs or later with iOS 17 or later.” These models won’t work with an older iPhone, or an iPhone XS or later not running iOS 17.

The latest watchOS version for Apple Watch is watchOS 10.
