By Mac Mini Pro, I'm assuming that you mean a Mac Mini with a M2 Pro chip.

Mac mini (2023) - Technical Specifications

If by Studio Display, you mean the 27" Apple 5K Studio DIsplay, the M2 Pro Mac Mini can drive two of those. You would plug each into one of the M2 Pro Mac Mini's four Thunderbolt ports, using a Thunderbolt cable. You could even attach a third HDMI monitor, with a resolution of 4K or less, to the M2 Pro Mac Mini's HDMI port.

The regular M2 Mac Mini could also drive two of these displays, but you would have to use up both of its two TB4 ports, and there wouldn't be the option to attach a third monitor later.

If by Studio Display, you mean one or more of the 15" to 21" Studio Displays that Apple sold between March 1998 and June 2004, we'd need more information (the specific Studio Display model(s)) to advise you on connections.

Hi, rat61

According to this spec sheet from Apple : How many displays can be connected to Mac mini - Apple Support (CA)

you can connect up to ( depending on the chip inside) up to 3 displays at 4K at 60 hz, 2 over Thunderbolt 3 and 1 over HDMI… and seeing as how Apple studio displays have Thunderbolt 3 only for connecting between computer+ monitor, then you’d have to go with Thunderbolt 3 (x2) 1 for each monitor, which look pretty nice, btw…
